Chewy Frosted Oatmeal Raisin Cookies (egg + dairy free)

The cookies themselves are oil free and I'd say are a bit healthier than your average cookie, but the frosting is a bit on the naughtier side! I may say this over and over but don't be fooled by the seemingly healthy ingredients. These cookies are addictive!

Ingredients:

Cookies-

  • 1/4 cup dates

  • 1/2 cup sweet potato puree

  • 1 heaping tbs of brown sugar (you can omit if you use more dates)

  • 1/4 cup soy milk

  • 1 1/4 cup almond meal

  • 1 1/4 cup oats

  • 1-2 tbsp cinnamon

  • how many ever raisins you like or chocolate chips (or how many ever will fit in the dough!)

Cream Cheese Frosting-

  • 1/4 cup Vegan Cream Cheese

  • 1/4 cup powdered sugar

  • 1-2 tbsp soy milk

Directions:

1. Preheat oven to 350 degrees

2. Combine chopped dates, puree, brown sugar, soy milk and vanilla in a small bowl. Use a fork to mix it together evenly. Set aside.

3. In a large bowl whisk together the flour, almond meal, oats and cinnamon.

4. Add the wet ingredients to the dry and mix with a spoon or fork until all of the dry ingredients are incorporated with the wet. It might take a minute so be patient even if it looks like it won't be enough wet ingredients it probably will be. Use the spoon or fork to press the dry into the wet.

6. Once combined add raisins and fold them into the dough.

7. If you are using a cookie sheet make sure to put parchment paper down so they don't stick. Or if you prefer non-stick spray, you can do that! If you're using a baking rack like I do in my video, you will just need a non-stick mat so they don't fall through the rack.

8. Using a cookie scoop or a spoon make a ball with 1 tablespoon of dough onto the cookie sheet. Flatten it a bit but not too hard so that it sticks to the bottom of the cookie sheet. Make sure it still moves around. Do this until your trays are full.

9. Bake for 12 minutes or so depending on your oven. I also used a rack which I find cooks things a minute or two faster.

10. While they are baking , make the frosting.

11. Whisk together the vegan cream cheese, soy milk and powdered sugar together until there are no lumps. You want this to be the consistency of a frosting! You can add more or less powdered sugar to make it thicker or thinner. Transfer the frosting into a plastic bag and put in fridge until it's time to frost.

12. Once the cookies have cooled off, or not...haha up to you! Take the bag of frosting out of the fridge and snip a tiny hole in the corner. Use this to frost the cookies in whatever design you like!
